  • 1/4 cup granulated sugar (for streusel topping)
  • 1/4 cup unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the cream cheese filling: In a medium bowl, beat together the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
  2. Make the cake batter: Preheat your oven to 350°F (175°C) and grease a baking pan. Whisk together the flour, baking powder, baking soda, and salt. In another bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. Gradually mix in the dry ingredients with the sour cream until just combined.
  3. Assemble the coffee cake: Pour half of the batter into the prepared pan and smooth. Spread the cream cheese filling over this layer. Top with the remaining batter and sprinkle fresh blueberries evenly on top.
  4. Prepare the streusel topping: Mix together the flour, sugar, and cinnamon. Add the cold cubed butter and use a pastry cutter to work the butter into the mixture until it resembles coarse crumbs.
  5. Bake the cake: Place the cake in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
