  • 1 lb boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1 packet taco seasoning (about 1 oz)
  • 8 oz cream cheese, softened
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1/2 cup chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of your slow cooker, laying them flat for even cooking.
  2. Sprinkle the ranch seasoning and taco seasoning evenly over the chicken breasts.
  3. Add the softened cream cheese on top, followed by corn, diced tomatoes, black beans, green chilies, and chicken broth.
  4. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken using two forks directly in the slow cooker.
  6. Stir everything together to combine the cream cheese with the other ingredients.
  7. Sprinkle the shredded cheddar cheese on top and stir until melted.
  8. Garnish with chopped green onions if desired. Serve hot.

Notes

This dish can be prepared quickly or allowed to simmer slowly for richer flavor.
