  • 2 and 1/2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 and 1/2 cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tbsp red food coloring
  • 1 tsp white distilled vinegar
  • 1 tsp vanilla extract
  • 1 tsp purple food coloring
  • 1 pound cream cheese, softened
  • 2 sticks unsalted butter, at room temperature
  • 1 tsp vanilla extract (for frosting)
  • 4 cups sifted confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them or lining them with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
  3. Mix the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract in a separate bowl.
  4. Gradually add the wet mixture to the dry ingredients, stirring until smooth.
  5. Stir in purple food coloring until you achieve your desired shade.
  6. Divide the batter evenly between the prepared pans, smoothing the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Combine the cream cheese and butter in a bowl, beating until smooth. Add vanilla extract and gradually incorporate confectioners’ sugar.
  9. Once the cakes are completely cool, place one layer on a serving plate. Spread cream cheese frosting on top.
  10. Place the second layer on top and frost the entire cake.
  11. Decorate as desired with sprinkles, fresh fruit, or edible flowers.

Notes

Ensure ingredients are at room temperature for best results. Measure flour correctly to avoid a dry cake.
