  • 1 lb ground turkey sausage, crumbled
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 (14.5 oz) can crushed tomatoes
  • 8 oz lasagna noodles, broken
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, cook the ground turkey sausage over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the pot, sautéing until the onion becomes soft and fragrant.
  3. Pour in the chicken broth and bring it to a gentle simmer.
  4. Add the crushed tomatoes, broken lasagna noodles, dried basil, oregano, red pepper flakes, salt, and pepper. Cook for about 10-12 minutes or until the noodles are tender.
  5. Mix in the heavy cream, ricotta, Parmesan, and mozzarella cheeses. Stir until the cheese has melted.
  6. Taste the soup and adjust the seasoning as necessary.
  7. Serve in bowls, garnishing with fresh parsley.

Notes

For extra flavor, add a splash of chicken stock or additional veggies like spinach. Can substitute turkey for lean ground beef or chicken.
