A creamy and velvety cheesecake infused with ripe bananas, resting on a beautifully baked graham cracker crust.

  • 2 cups crushed graham crackers
  • ½ cup melted butter
  • 24 oz softened cream cheese
  • 1 cup sugar
  • 3 ripe bananas, mashed
  • 3 eggs
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Sliced bananas for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Grease a 9-inch springform pan.
  3. Combine the crushed graham crackers and melted butter until mixed thoroughly.
  4. Press the mixture into the bottom of the prepared pan to form a crust.
  5. Bake for 10 minutes, then let cool.
  6. Beat together the softened cream cheese and sugar until smooth.
  7. Add the mashed bananas, eggs, vanilla extract, and cinnamon, and mix well.
  8. Pour the mixture into the cooled crust.
  9. Bake for 50-60 minutes until set at the edges but slightly wobbly in the center.
  10. Cool in the oven with the door cracked for an hour.
  11. Refrigerate for at least 4 hours or overnight.
  12. Top with sliced bananas before serving.

Notes

Use room temperature cream cheese for smoother texture and allow the cheesecake to cool gradually to prevent cracks.
