  • 1 pound boneless and skinless chicken breasts or thighs
  • 2 teaspoons Cajun seasoning, divided
  • 1 tablespoon butter
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 1 cup bell pepper, diced
  • 4 cloves garlic, chopped
  • 1 teaspoon thyme, chopped
  • 6 cups chicken broth
  • 1 (14.5 ounces) can diced tomatoes (optional)
  • 1 tablespoon Worcestershire sauce
  • 8 ounces pasta
  • 1/2 cup heavy/whipping cream (optional)
  • 1/3 cup Parmigiano Reggiano, grated
  • 1 tablespoon lemon juice (optional)
  • 2 tablespoons parsley, chopped (optional)
  • 2 green onions, thinly sliced (optional)
  • Cayenne, salt, and pepper to taste

Instructions

  1. Cook the chicken: Begin by heating the oil in a large saucepan over medium-high heat. Season the chicken with 1 teaspoon of Cajun seasoning. Cook until golden brown, about 2-4 minutes on each side. When done, set the chicken aside and let it rest.
  2. Sauté the vegetables: In the same pan, melt the butter and add the diced onions, celery, and bell pepper. Cook until soft, around 5-7 minutes.
  3. Flavor it up: Add the chopped garlic, thyme, and the remaining Cajun seasoning to the sautéed vegetables. Sauté for an additional minute.
  4. Add the broth: Pour in the chicken broth and return the cooked chicken to the pot. If using diced tomatoes, add them along with the Worcestershire sauce.
  5. Cook the pasta: Bring the mixture to a boil and then add your choice of pasta. Let it simmer until the pasta is al dente, about 7 minutes; stir occasionally.
  6. Finish the soup: Once the pasta is cooked, remove the chicken, slice or shred it, and return it to the pot. Stir in the heavy cream and Parmigiano Reggiano until melted.
  7. Add freshness: Incorporate the lemon juice, parsley, and green onions. Season with cayenne, salt, and pepper to taste. Serve hot.
