A comforting blend of rich flavors and creamy textures, this pasta dish features Calabrian chili for a delightful kick.

  • 12 oz pappardelle pasta
  • 1 lb Italian sausage, crumbled
  • 1 fennel bulb, thinly sliced
  • 2 tablespoons Calabrian chili paste
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pappardelle in a large pot of boiling salted water according to the package instructions until al dente. Drain the pasta, saving about a cup of starchy water, and set it aside.
  2. Prepare the sausage by warming olive oil in a large skillet over medium heat, adding the crumbled sausage, and cooking until browned (about 5-7 minutes).
  3. Add the thinly sliced fennel and minced garlic to the skillet, cooking until the fennel softens (about 5-7 minutes).
  4. Incorporate the Calabrian chili paste, cooking briefly to meld the flavors.
  5. Create the sauce by pouring in the heavy cream and adding grated Parmesan cheese, stirring until smooth. Season with salt and pepper to taste.
  6. Toss in the cooked pappardelle, mixing gently to coat with the sauce, adding reserved pasta water if needed. Serve immediately with extra Parmesan.

Notes

For optimal flavor, start with less Calabrian chili paste and adjust according to your taste. Reserve pasta water for sauce adjustment.
