A warm, comforting soup with vibrant broccoli and creamy cheddar cheese, perfect for chilly evenings.

  • 3 cloves garlic, minced
  • 1/2 cup chopped onion
  • 3 cups broccoli florets
  • 3 1/2 cups chicken broth (or vegetable broth for a vegetarian option)
  • 1 cup heavy cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 3 cups shredded cheddar cheese
  • 1/2 teaspoon xanthan gum (optional for thickening)

Instructions

  1. Sauté the aromatics: Place a large pot over medium-high heat. Add butter and let it melt before introducing the chopped onions and minced garlic. Sauté for about 2-3 minutes.
  2. Add the broccoli and liquid: Toss in broccoli florets, chicken broth, and heavy cream. Stir to combine, then sprinkle in garlic powder, salt, and pepper.
  3. Bring to a boil: Allow the mixture to come to a gentle boil, then reduce heat to medium. Let it simmer uncovered for around 10 minutes.
  4. Incorporate the cheese: Remove the pot from heat and begin adding the shredded cheddar cheese, one cup at a time, stirring thoroughly after each addition.
  5. Thicken (optional): If desired, stir in xanthan gum for a thicker consistency.
  6. Serve and enjoy: Ladle the soup into bowls and top with extra shredded cheese if desired.

Notes

For an extra depth of flavor, add a pinch of nutmeg with cheese. Fresh broccoli is ideal, but frozen works well too.
