A comforting dish that combines tender chicken, fluffy rice, and a creamy sauce, topped with gooey cheese.

  • 2 cups white rice
  • 4 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup frozen peas and carrots
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish thoroughly.
  2. Combine the white rice and chicken broth in a large mixing bowl and pour into the prepared baking dish.
  3. Cook the chicken pieces in a skillet over medium-high heat until no longer pink in the center.
  4. Add the frozen peas and carrots, diced onion, diced celery, and diced bell pepper to the skillet. Cook for an additional 2-3 minutes.
  5. Mix together the mayonnaise, sour cream, salt, black pepper, garlic powder, and paprika in a separate bowl.
  6. Pour the mayonnaise mixture over the cooked chicken and vegetables, stirring until well combined.
  7. Spread the chicken and vegetable mixture evenly over the rice in the baking dish.
  8. Sprinkle the shredded cheddar cheese and grated Parmesan cheese over the top.
  9. Cover the baking dish with aluminum foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  11. Let it cool for a few minutes before serving.

Notes

For quicker prep, use rotisserie chicken. You can also add extra vegetables or spices to customize the dish.
