A delightful casserole combining tender chicken and fresh spinach in a rich, creamy mixture, perfect for family dinners.

  • 4 boneless, skinless chicken breasts, cooked and shredded
  • 3 cups fresh spinach, chopped
  • 1 cup cooked rice (white or brown)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted
  • 1/4 cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Sauté the diced onion and minced garlic in a large skillet for 2-3 minutes until fragrant.
  3. Cook in the chopped spinach for another 2-3 minutes, stirring until wilted.
  4. Combine the cooked chicken, rice, cream cheese, heavy cream, mozzarella, Parmesan, basil, oregano, salt, and pepper in a bowl.
  5. Mix in the sautéed spinach mixture until combined.
  6. Transfer the mixture to the baking dish, spreading it into an even layer.
  7. Prepare the topping by mixing breadcrumbs, melted butter, and Parmesan cheese in a small bowl.
  8. Sprinkle the topping evenly over the casserole.
  9. Bake for 25-30 minutes until golden and bubbling. Let cool for 5 minutes before serving.

Notes

You can add a dash of nutmeg for an extra flavor or mix in other vegetables like mushrooms for added nutrition.
