Delightful, creamy chicken meatballs enveloped in a rich sauce, perfect for any occasion.

Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (for sauce)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine ground chicken, breadcrumbs, 1/4 cup grated Parmesan cheese, parsley, egg, minced garlic, salt, and pepper in a large mixing bowl.
  3. Form the mixture into meatballs, about 1 1/2 inches in size.
  4. Bake for 15-18 minutes until cooked through and golden brown.
  5. Heat olive oil in a skillet over medium heat.
  6. Sauté the remaining minced garlic for 1-2 minutes.
  7. Pour in chicken broth, heavy cream, sun-dried tomatoes, and Italian seasoning. Stir to combine.
  8. Simmer the sauce for 4-5 minutes until slightly thickened.
  9. Stir in 1/4 cup grated Parmesan cheese until melted.
  10. Add the baked meatballs to the skillet and gently toss to coat with the sauce.
  11. Simmer for another 2-3 minutes.
  12. Serve hot, garnished with extra parsley and Parmesan if desired.

Notes

Use slightly chilled ground chicken for easier rolling. Don’t overmix the meatball mixture to keep them tender.
