  • 1 lb mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 cup vegetable broth
  • 1/2 cup sour cream
  • 1 tsp Dijon mustard
  • 1 tbsp soy sauce
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare your ingredients: Slice the mushrooms, dice the onion, and mince the garlic.
  2. Heat butter and olive oil in a large skillet over medium-high heat until melted.
  3. Add the sliced mushrooms and cook until golden brown.
  4. Lower the heat to medium and add in the diced onion, cooking until soft.
  5. Stir in the garlic and cook until fragrant, about 1 minute.
  6. Dust with flour, stirring well to coat the mushrooms and onions.
  7. Gradually pour in the vegetable broth while stirring until smooth.
  8. Stir in the Dijon mustard and soy sauce, letting it simmer for 5 to 7 minutes.
  9. Lower the heat and gently stir in the sour cream.
  10. Season with salt and black pepper to taste and garnish with parsley before serving.

Notes

Serve with egg noodles, rice, or crusty bread. Use fresh mushrooms for the best flavor.
