  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Crusty bread for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add the Italian sausage, breaking it apart as it browns for about 5-7 minutes.
  3. Stir in the chopped onion and allow it to sauté for 3-4 minutes until translucent.
  4. Introduce the minced garlic and cook for an additional minute.
  5. Pour in the chicken broth and let it simmer for about 10 minutes.
  6. Reduce the heat to low, stir in the heavy cream, and sprinkle in the Parmesan cheese.
  7. Add the Italian seasoning and optional red pepper flakes.
