  • 1 1/2 cups of graham cracker crumbs
  • 1/3 cup of white sugar
  • 6 tablespoons of melted butter
  • 3 cups of softened cream cheese
  • 1 cup of white sugar
  • 3 tablespoons of all-purpose flour
  • 3/4 cup of key lime juice
  • 1 tablespoon of key lime zest
  • 1/2 teaspoon of vanilla extract
  • 3 large eggs
  • 1 cup of sour cream

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Combine the graham cracker crumbs, white sugar, and melted butter in a medium bowl.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust.
  4. Beat the softened cream cheese and 1 cup of sugar in a large mixing bowl until smooth and creamy.
  5. Gradually add the all-purpose flour, key lime juice, key lime zest, and vanilla extract to the cream cheese mixture.
  6. Incorporate the eggs one at a time, beating on low speed after each addition until just blended.
  7. Stir in the sour cream until well combined.
  8. Pour the cheesecake filling over the prepared crust in the springform pan.
  9. Bake in the preheated oven for 55-60 minutes until the center is set but slightly wobbly.
  10. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour.
  11. Chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.

For a firmer cheesecake, bake slightly longer but avoid overbaking. Chill overnight for the best flavor and texture.
