A tangy, creamy cheesecake that combines vibrant citrus flavors with sweet cherries and crunchy pistachios, perfect for special occasions.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup chopped pistachios
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • Zest of 1 lemon
  • Zest of 1 lime
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry puree (fresh or frozen)
  • 1 cup fresh cherries, pitted and halved
  • 1/4 cup cherry preserves or jam
  • 1/4 cup chopped pistachios (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C) and generously grease a 9-inch springform pan.
  2. In a small bowl, mix together the graham cracker crumbs, granulated sugar, melted butter, and chopped pistachios.
  3. Press the mixture into the bottom of the prepared springform pan to form an even crust. Bake for 10-12 minutes until golden brown.
  4. In a large mixing bowl, beat the softened cream cheese and sour cream together until smooth.
  5. Gradually add in the sugar, mixing until fluffy.
  6. Add the eggs one at a time, mixing thoroughly after each addition.
  7. Stir in the lemon juice, lime juice, lemon zest, lime zest, and vanilla extract.
  8. Gently swirl in the cherry puree.
  9. Pour the cheesecake batter over the cooled crust.
  10. Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  11. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about 1 hour.
  12. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  13. Combine the fresh cherries and cherry preserves in a small saucepan over low heat and cook for 5-7 minutes until thickened.
  14. Top the chilled cheesecake with the cherry mixture and remaining chopped pistachios before serving.

Notes

Ensure all ingredients are at room temperature, do not overbeat the cream cheese, and cool the cheesecake slowly to maintain its texture.
