  • 1 pound boneless and skinless chicken breasts or thighs
  • 2 teaspoons Cajun seasoning, divided
  • 1 tablespoon butter
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 1 cup bell pepper, diced
  • 4 cloves garlic, chopped
  • 1 teaspoon thyme, chopped
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes (optional)
  • 1 tablespoon Worcestershire sauce (gluten-free if needed)
  • 8 ounces pasta (gluten-free if desired)
  • 1/2 cup heavy/whipping cream (optional)
  • 1/3 cup Parmigiano Reggiano, grated
  • 1 tablespoon lemon juice (optional)
  • 2 tablespoons parsley, chopped (optional)
  • 2 green onions, thinly sliced (optional)
  • Cayenne, salt, and pepper to taste

Instructions

  1. Cook the chicken: Heat the oil in a large saucepan over medium-high heat. Season the chicken with 1 teaspoon of Cajun seasoning, cooking until golden brown—about 2-4 minutes per side. Once done, set the chicken aside.
  2. Sauté the vegetables: In the same pan, melt the butter before adding the diced onions, celery, and bell pepper. Cook until soft, which should take around 5-7 minutes.
  3. Flavor it up: Add garlic, thyme, and the remaining Cajun seasoning to the vegetables. Sauté for an additional minute until fragrant.
  4. Add the broth: Pour in the chicken broth, and add the cooked chicken back to the pot. If you’re including diced tomatoes, add them now along with the Worcestershire sauce.
  5. Cook the pasta: Bring the mixture to a boil, then add the pasta. Lower the heat and let it simmer until the pasta is al dente, typically around 7 minutes.
  6. Finish the soup: Remove the chicken, slice or shred it, and return it to the pot. Turn off the heat and stir in heavy cream and Parmesan cheese, allowing the cheese to melt seamlessly into the soup.
  7. Add freshness: Incorporate lemon juice, parsley, and green onions. Don’t forget to season it with cayenne, salt, and pepper to taste. Serve hot and enjoy the burst of flavors!

Notes

For a thicker soup, simmer longer to reduce the broth. Adjust the Cajun seasoning for desired spice level.
