  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley (for garnish)
  • 8 oz fettuccine or pasta of choice
  • 1 tablespoon olive oil
  • ¼ cup grated Parmesan (for topping)

Instructions

  1. Cook the pasta by boiling water in a large pot. Add a pinch of salt and the fettuccine or pasta of your choice, cooking according to package directions until al dente. Save some pasta water for later use.
  2. Sauté the chicken in a large skillet with olive oil over medium heat, cooking until browned on all sides, about 6-8 minutes. Season with salt, pepper, and Italian seasoning. Remove chicken and set aside.
  3. Prepare the sauce by melting butter in the same skillet over medium heat, adding minced garlic and sautéing until fragrant, about 1 minute. Pour in the chicken broth, scraping up the browned bits, and let it simmer for 2-3 minutes.
  4. Add the heavy cream and grated Parmesan cheese, mixing until smooth, and bring to a gentle simmer.
  5. Combine the sautéed chicken with the sauce, tossing to coat and cooking for another 2-3 minutes.
  6. Serve the chicken and sauce over the drained pasta, garnishing with chopped parsley and an extra sprinkle of grated Parmesan cheese.
