  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Add the Italian sausage to a large pot over medium heat, breaking it apart with a spoon and searing until golden brown. Drain any excess fat.
  2. Toss in the chopped onion and minced garlic, sautéing together for 3-4 minutes until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, bringing the mixture to a vigorous boil.
  4. Add the ditalini pasta and sprinkle in the Italian seasoning, stirring to combine. Lower the heat to simmer for 8-10 minutes.
  5. Gently stir in the heavy cream and grated Parmesan cheese until melted and combined.
  6. Fold in the fresh spinach, cooking for an additional 2-3 minutes until wilted. Season with salt and pepper to taste.
