Ingredients

Scale
  • 2 cups of graham cracker crumbs
  • 1/4 cup of granulated sugar
  • 1/2 cup of unsalted butter, melted
  • 16 oz of cream cheese, softened
  • 1/2 cup of granulated sugar
  • 2 large eggs
  • 1 tsp of vanilla extract
  • 4 cups of sliced fresh peaches (or canned, drained)
  • 1/4 cup of brown sugar
  • 1/4 cup of all-purpose flour
  • 1 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • 1/2 tsp of vanilla extract
  • 1 tbsp of lemon juice
  • 1/4 cup of unsalted butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan to ensure easy removal later.
  2. Combine the graham cracker crumbs, granulated sugar, and melted butter in a medium bowl. Mix until well combined, then press the mixture firmly into the bottom of the prepared pan. Bake for about 10 minutes and then set aside to cool slightly.
  3. Beat the softened cream cheese and sugar together in a large bowl until smooth and creamy. Add the eggs one at a time, ensuring to mix well after each addition. Stir in 1 tsp of vanilla extract and combine.
  4. Pour the cheesecake batter over the cooled crust and pop it in the oven. Bake for 30 to 35 minutes or until it is just set in the center. Once baked, allow it to cool on a wire rack.
  5. Combine the sliced peaches, brown sugar, flour, cinnamon, nutmeg, vanilla extract, and lemon juice in another bowl. Gently stir until the peach slices are evenly coated.
  6. Sprinkle cubed butter over the peach mixture, ensuring it’s well-distributed, and then spread this topping evenly over the cooled cheesecake layer.
  7. Return the assembled cheesecake to the oven and bake for an additional 25 to 30 minutes, or until the peach topping is bubbly and golden brown.
  8. Allow the cheesecake to cool completely in the pan. Once cooled, refrigerate for at least four hours or ideally overnight before serving.

Notes

Ensure cream cheese is softened to avoid lumps. Allow adequate cooling time for the best texture.
