A decadent Pistachio Cheesecake with a buttery graham cracker crust and rich, creamy filling showcasing the unique taste of pistachios.

  • 2 tablespoons granulated sugar
  • ¼ teaspoon salt
  • 1 stick unsalted butter, melted
  • 32 oz cream cheese, at room temperature
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • 2 large eggs, at room temperature
  • 1 large egg yolk, at room temperature
  • ¾ cup pistachio paste
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ cup heavy cream
  • 4 tablespoons pistachio cream
  • 2 tablespoons chopped pistachios

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Pulse the pistachios in a food processor until coarsely chopped.
  3. Add the graham cracker crumbs, sugar, and salt, and blend until fine crumbs form.
  4. Mix in ¾ of the melted butter until the texture resembles wet sand.
  5. Press the mixture into the bottom of a springform pan and bake for 10 minutes.
  6. Reduce the oven temperature to 325°F (170°C) and wrap the springform pan in foil for a water bath.
  7. Beat the cream cheese, ¾ cup sugar, and cornstarch until smooth and creamy.
  8. Add the eggs, egg yolk, vanilla extract, and almond extract, mixing just until combined.
  9. Blend in the pistachio paste and heavy cream until smooth.
  10. Pour the batter over the cooled crust.
  11. Place the pan in a roasting dish filled with hot water.
  12. Bake for around 45 minutes or until the edges are set and the center has a slight jiggle.
  13. Turn off the oven and crack the door open, allowing the cheesecake to cool for 1 hour.
  14. Chill in the refrigerator for at least 4 hours or overnight.
  15. Spread the pistachio cream on top and sprinkle with chopped pistachios before serving.

Notes

For best results, ensure all ingredients are at room temperature. Using a water bath helps prevent cracks.
