12 oz fettuccine or tagliatelle pasta
2 tbsp unsalted butter
2 cloves garlic, minced
1 cup pumpkin puree
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 tsp ground nutmeg
1/2 tsp ground black pepper
Salt, to taste
Fresh sage leaves (about 6-8 leaves)
1 tbsp olive oil
Fresh thyme or parsley, chopped, for garnish
Extra grated Parmesan, for serving
Instructions
Prepare the Pasta: Begin by bringing a large pot of salted water to a boil. Add your fettuccine or tagliatelle pasta, cooking it according to the package instructions until al dente. Don’t forget to reserve a cup of pasta water before draining!
Fry the Sage: In a large skillet, heat olive oil over medium heat. Once hot, gently fry the sage leaves for about 2 minutes or until they become crispy. Remove them from the skillet and set aside for later.
Add Pumpkin and Cream: Stir in the pumpkin puree and let it warm for about 2 minutes. Then, pour in the heavy cream, stirring gently to combine, and allow the mixture to simmer.
Incorporate Cheese and Spices: Gradually add the grated Parmesan cheese, along with nutmeg, black pepper, and salt. Stir continuously until the cheese melts and the sauce thickens, which should take about 3 to 5 minutes.
Combine Pasta with Sauce: Once the sauce has reached your desired thickness, add the drained pasta to it. Mix well, and use some of the reserved pasta water to help achieve your perfect sauce consistency.
Finish and Serve: Remove the skillet from heat, fold in the crispy sage, and serve immediately, garnished with fresh parsley or thyme and a sprinkle of extra Parmesan.
