A delectable dessert that combines creamy cheesecake with refreshing raspberry mousse, perfect for any occasion.

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup melted butter
  • 2 tbsp sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 eggs
  • 1 1/2 cups fresh raspberries
  • 1/4 cup sugar
  • 1 tsp lemon juice
  • 1 1/2 tsp gelatin powder
  • 2 tbsp water
  • 1/2 cup heavy cream, whipped

Instructions

  1. Preheat the oven to 325°F (163°C). Mix the crushed graham crackers, melted butter, and 2 tablespoons of sugar in a mixing bowl. Press this mixture into the bottom of a springform pan.
  2. Bake for 10 minutes until lightly golden. Allow the crust to cool completely.
  3. Beat the softened cream cheese until smooth. Add in the 1/2 cup sugar and 1 teaspoon vanilla extract, mixing until combined. Incorporate the eggs one at a time.
  4. Pour the creamy batter over the cooled graham cracker crust and return it to the oven. Bake for approximately 40 minutes.
  5. Cool the cheesecake completely at room temperature.
  6. Blend the fresh raspberries with 1/4 cup sugar and lemon juice until smooth. Strain through a fine mesh sieve.
  7. Bloom the gelatin by sprinkling it over 2 tablespoons of water. Let it sit for about five minutes, then heat until dissolved.
  8. Add the gelatin to the raspberry puree and mix. Fold the raspberry mixture into the whipped cream gently.
  9. Spread the mousse over the cooled cheesecake and smooth it out. Cover and refrigerate for at least four hours.
  10. Garnish with fresh raspberries before serving.

Ensure to let the cheesecake cool completely before adding the mousse to achieve ideal layers.
