Creamy Spinach and Red Pepper Salmon and Parmesan

A delightful dish featuring tender salmon fillets in a creamy sauce with fresh spinach and roasted red peppers, topped with Parmesan cheese.

Ingredients

  • 2 salmon fillets, skin on (about 1 lb.)
  • Salt and pepper to season
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 3 cloves garlic, finely diced
  • 4 oz. roasted red peppers, diced
  • 4 cups fresh baby spinach
  • 1/2 cup Half & Half or heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp. red pepper flakes, or to taste
  • 1/4 cup chopped parsley

Instructions

  1. Season the salmon fillets with salt and pepper on both sides, allowing the flavors to penetrate the fish.
  2. Heat the olive oil in a medium non-stick skillet over medium heat. The oil should shimmer when ready.
  3. Cook the salmon fillets skin-side down for about 5 minutes. Once the skin is crispy, flip and cook for another 5 minutes, or until the salmon is cooked through. Remove the salmon from the pan and set it aside.
  4. Sauté the garlic and roasted red peppers in the same skillet with butter for about 1 minute, allowing the garlic to become fragrant.
  5. Add the fresh spinach to the skillet and toss until wilted, which should take just a couple of minutes.
  6. Create the creamy sauce by stirring in half & half (or heavy cream) and the grated Parmesan cheese. Add red pepper flakes, parsley, and any necessary seasoning to taste.
  7. Return the salmon to the pan, spooning the rich sauce over it. Warm through for about 1 minute, allowing the flavors to meld.
  8. Serve the dish over pasta, rice, or steamed vegetables for a complete meal that is sure to please.

Notes

Choose fresh salmon fillets with a vibrant color and firm texture for the best flavor. Adjust seasonings to taste and watch the cooking time closely to avoid overcooking the salmon.
