A warm and indulgent dish featuring tender salmon fillets in a creamy sauce with fresh spinach and roasted red peppers.

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1/2 cup roasted red peppers, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  3. Season the salmon fillets with salt and pepper.
  4. Place the fillets skin-side down in the skillet and cook for about 4-5 minutes.
  5. Carefully remove the salmon from the skillet and set aside.
  6. Melt the butter over medium heat in the same skillet.
  7. Add the minced garlic and sauté for about 1 minute until fragrant.
  8. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  9. Incorporate roasted red peppers, heavy cream, and Parmesan cheese; stir until combined.
  10. Add lemon juice and adjust seasoning as needed.
  11. Return the salmon to the skillet and spoon sauce over each piece.
  12. Bake in the preheated oven for 5-7 minutes until cooked through.
  13. Garnish with parsley before serving.

Notes

Ensure salmon does not overcook; use an instant-read thermometer to check for doneness.
