This comforting casserole blends perfectly cooked shrimp with cheese tortellini in a rich, creamy Alfredo sauce.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 12 oz cheese tortellini
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the cheese tortellini according to the package instructions until they’re al dente. Drain and set aside.
  3. Melt the butter in a large skillet over medium heat.
  4. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Toss in the shrimp and sauté for 3-4 minutes until pink and opaque. Remove from skillet and set aside.
  6. Pour in the heavy cream and let it come to a gentle simmer.
  7. Stir in the grated Parmesan cheese, salt, and pepper, cooking until thickened (about 5 minutes).
  8. Return the tortellini and shrimp to the skillet, stirring to coat everything in the sauce.
  9. Transfer the mixture to a greased baking dish.
  10. Bake for 20-25 minutes, until golden and bubbly.
  11. Garnish with chopped parsley before serving.

Notes

Consider adding lemon juice or zest for a refreshing flavor. Optionally, sprinkle breadcrumbs on top for a crispy finish.
