A delightful dish featuring earthy mushrooms, fresh spinach, and tender gnocchi in a rich, creamy sauce—perfect for a cozy dinner.

Ingredients

  • 1 tablespoon olive oil
  • 8 oz crimini mushrooms, sliced
  • Salt and pepper to taste
  • 16 oz potato gnocchi
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 5 oz fresh spinach
  • 1/4 teaspoon salt
  • Coarsely ground black pepper to taste
  • Red pepper flakes to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms seasoned with salt and pepper and sauté until browned, about 1-2 minutes. Remove half the cooked mushrooms and set aside.
  2. Add the potato gnocchi, chicken broth, heavy cream, minced garlic, Italian seasoning, smoked paprika, and salt to the skillet. Stir well and bring to a gentle boil. Cover and cook for about 5 minutes.
  3. Stir in the fresh spinach and cook for another 5 minutes, stirring occasionally until the spinach is wilted. Adjust cooking time for a thicker sauce if desired.
  4. Taste and season with additional salt, black pepper, and red pepper flakes as preferred.
  5. Top with reserved mushrooms before serving for presentation and enhanced flavor.

Notes

For a lighter version, substitute heavy cream with half-and-half. Consider adding vegetables like zucchini for more nutrition.
