Creamy Spinach and Red Pepper Salmon and Parmesan

A luscious salmon dish topped with a creamy sauce combining spinach and roasted red peppers, perfect for weeknight dinners or special occasions.

Ingredients

  • 2 salmon fillets, skin on (about 1 lb.)
  • Salt and pepper to season
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 3 cloves garlic, finely diced
  • 4 oz. roasted red peppers, diced
  • 4 cups fresh baby spinach
  • 1/2 cup Half & Half or heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp. red pepper flakes, or to taste
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Season the salmon fillets with salt and pepper.
  2. Heat the olive oil in a medium non-stick skillet over medium heat.
  3. Cook the salmon fillets skin-side down for about 5 minutes, then flip and cook for another 5 minutes or until done. Remove from the pan.
  4. Sauté garlic and red peppers in the same skillet with butter for 1 minute.
  5. Add the spinach and toss until wilted.
  6. Create the creamy sauce by stirring in Half & Half and Parmesan cheese, adding red pepper flakes, parsley, and seasoning.
  7. Return the salmon to the pan, spooning sauce over it. Warm through for 1 minute.
  8. Serve over pasta, rice, or vegetables.

Notes

For added flavor, consider using fresh herbs like basil or dill. Adjust red pepper flakes for heat preference.
