A creamy and indulgent cheesecake infused with white chocolate and topped with fresh strawberries.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 cups softened cream cheese
  • 1 cup melted white chocolate
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup chopped strawberries
  • 2 tablespoons sugar (for strawberries)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease a springform pan generously.
  3. Combine graham cracker crumbs and melted butter in a bowl, mixing until fully coated, then press into the base of the pan.
  4. Beat cream cheese and sugar together until smooth.
  5. Fold in the melted white chocolate gently.
  6. Crack the eggs one by one into the mixture, mixing well after each addition.
  7. Stir in the vanilla extract and sour cream until smooth.
  8. Pour the cheesecake mixture over the prepared crust and smooth the top.
  9. Bake for 50 to 60 minutes, or until the center is set but still slightly jiggly.
  10. While baking, toss the chopped strawberries with sugar and let sit for 15 minutes.
  11. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
  12. Top with macerated strawberries before serving.

Notes

Ensure cream cheese and eggs are at room temperature. Use a water bath for even baking.
