  • 1/2 teaspoon salt
  • 1 cup buttermilk

  • 2 teaspoons vanilla extract
  • 1 teaspoon strawberry extract (optional)
  • A few drops of pink food coloring (optional)
  • 1 1/2 cups powdered sugar (for glaze)
  • 2 tablespoons strawberry puree (for glaze)
  • 1 tablespoon milk or heavy cream (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a bundt or loaf pan by greasing it lightly and dusting it with flour.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition.
  4. Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add this to the creamy butter mixture, alternating with the buttermilk.
  5. Fold in the strawberry puree and food coloring, ensuring an even distribution throughout the batter.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Prepare the glaze by whisking together the powdered sugar, strawberry puree, and milk until smooth.
  9. Drizzle the glaze over the cooled cake and serve.
