A quick and indulgent one-pan meal featuring tender cheese tortellini in a creamy tomato basil sauce.

  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 cups fresh baby spinach
  • 1/2 cup fresh basil
  • 1/2 cup grated Parmesan cheese (plus more for serving)
  • 1/2 teaspoon dried oregano
  • 9 ounces refrigerated cheese tortellini
  • 1/2 cup vegetable broth

Instructions

  1. Prepare the tomatoes: Begin by pureeing 14 ounces of the canned diced tomatoes in a food processor until smooth.
  2. Warm the sauce: In a medium skillet over medium heat, add the pureed tomatoes, minced garlic, and heavy cream.
  3. Simmer: Reduce the heat and let it simmer for about 2-3 minutes until the mixture thickens slightly.
  4. Add greens and tortellini: Stir in the fresh spinach, basil, grated Parmesan cheese, dried oregano, cheese tortellini, and the remaining diced tomatoes with their liquid.
  5. Incorporate broth: Pour in the vegetable broth, ensuring the tortellini is submerged.
  6. Cook: Allow to cook for 5 to 8 minutes until the tortellini are warmed through and tender.
  7. Serve: Sprinkle additional Parmesan cheese on top and enjoy.

Notes

For added flavor, sauté garlic with onions before adding tomatoes. Customize with other vegetables or proteins as desired.
