A mouthwatering combination of flavors with a creamy sauce enveloping tender salmon fillets, perfect for weeknight dinners.

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup vegetable or seafood broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the salmon by heating olive oil in a skillet over medium-high heat. Season the fillets generously with salt and pepper.
  2. Sear the fillets for about 3-4 minutes on each side until they are golden brown. Once cooked, carefully remove the fillets from the skillet and set them aside.
  3. Sauté minced garlic in the same skillet until fragrant, about 30 seconds to 1 minute. Next, add the fresh spinach and sun-dried tomatoes, cooking until the spinach wilts down, about 2-3 minutes.
  4. Incorporate the heavy cream and broth into the skillet, stirring to combine. Season with oregano, red pepper flakes, salt, and black pepper. Allow the mixture to simmer gently for about 5 minutes.
  5. Return the salmon to the skillet, spooning the sauce over the top. Let it simmer for an additional 2-3 minutes until everything is heated through.
  6. Garnish with fresh parsley before serving.

Notes

Choose high-quality salmon fillets for the best flavor. Don’t rush the garlic to avoid burning it. For a thicker sauce, let the cream simmer longer.
