  • 1/2 cup sun-dried tomatoes

  • 1/2 cup vegetable or seafood broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the Salmon: Heat the olive oil in a large skillet over medium-high heat. Season each salmon fillet with salt and black pepper, ensuring they are well coated.
  2. Sear the Fillets: Once the oil is hot and shimmering, place the salmon fillets in the skillet skin-side down. Cook for about 3-4 minutes per side until golden. Remove from skillet and set aside.
  3. Sauté the Aromatics: In the same skillet, add the minced garlic and sauté for 1-2 minutes. Add the chopped spinach and sun-dried tomatoes, cooking for another 2-3 minutes until the spinach has wilted.
  4. Create the Cream Sauce: Pour in the heavy cream and broth, stirring to combine. Add oregano and red pepper flakes, season with salt and pepper, and simmer for about 5 minutes.
  5. Combine Salmon with Sauce: Return the cooked salmon to the skillet, spooning sauce over the fish. Simmer for an additional 2-3 minutes to heat through.
  6. Garnish and Serve: Garnish with fresh parsley before serving.
