  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs and 1/4 cup of sugar in a medium bowl.
  3. Pour in the melted butter and stir until coated.
  4. Press this mixture into the bottom of a springform pan.
  5. Bake for 10 minutes, then remove and cool.
  6. In a large bowl, beat the softened cream cheese and 1 cup of sugar until smooth.
  7. Add the vanilla extract and mix well.
  8. Crack in the eggs one by one, mixing thoroughly after each addition.
  9. Pour in the heavy cream and blend until smooth.
  10. Pour the cheesecake batter over the baked crust.
  11. Bake for 50-60 minutes until the center is slightly jiggly.
  12. Turn off the oven and let the cheesecake cool with the door slightly ajar for 1 hour.
  13. Refrigerate for at least 4 hours or overnight.
  14. Smooth the top with brown sugar and caramelize with a kitchen torch.

Notes

For best results, ensure the cream cheese is well softened to avoid lumps in the batter. Cool the cheesecake gradually to prevent cracking.
