A delightful twist on a classic comfort food, Air Fryer Meatloaf is rich, savory, and easy to make for any meal.

Ingredients

  • 2/3 cup breadcrumbs
  • 2/3 cup milk
  • 1/2 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 pounds ground beef
  • 2 large eggs
  • 2 tablespoons ketchup
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons dried oregano
  • 1/2 cup chopped fresh parsley
  • 1/2 cup ketchup (for glaze)
  • 3 tablespoons brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)
  • 1 tablespoon mustard (for glaze)

Instructions

  1. Combine the breadcrumbs with milk in a mixing bowl and hydrate for 5–10 minutes.
  2. Heat the olive oil in a skillet over medium heat, add the diced onions, and sauté for about 2 minutes.
  3. Mix together the hydrated breadcrumbs, sautéed onions, ground beef, eggs, ketchup, Worcestershire sauce, garlic powder, salt, pepper, oregano, and parsley.
  4. Prepare the glaze by whisking together ketchup, brown sugar, apple cider vinegar, and mustard in a small bowl.
  5. Preheat your air fryer to 350°F (175°C). Form the meat mixture into two loaves.
  6. Place the loaves in the air fryer basket and cook for 20 minutes. Brush with glaze and cook for an additional 15 minutes.
  7. Check the internal temperature to ensure it reaches 160°F (70°C). Let rest for 10 minutes before slicing.
