Delicious crispy potato balls filled with cheese, garlic, and butter, perfect for any occasion.

  • 2 large potatoes, peeled and cut into cubes
  • 1 cup grated cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 4 tablespoons butter
  • 2 minced garlic cloves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a baking sheet with butter or cooking spray.
  3. Bring a large pot of salted water to a rolling boil. Add the potato cubes and cook for 10-12 minutes, or until fork-tender.
  4. Drain the potatoes and return them to the pot.
  5. Melt the butter in a small pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  6. Pour the melted garlic butter over the potatoes and mash until smooth.
  7. Stir in the cheddar cheese, parmesan, parsley, salt, and pepper until combined.
  8. Roll the mixture into small balls (1-2 inches in diameter) and place them on the baking sheet.
  9. Bake for 15-20 minutes, or until golden brown and crispy.
  10. Remove from the oven and serve hot, garnished with extra parsley if desired.
