Delicious potato balls filled with creamy mashed potatoes, rich cheese, and aromatic garlic, all encased in a crispy golden exterior.

Ingredients

  • 2 large potatoes, peeled and cut into cubes
  • 1 cup grated cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 4 tablespoons butter
  • 2 minced garlic cloves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a baking sheet with butter or cooking spray.
  3. Bring a large pot of salted water to a rolling boil and add the potato cubes, cooking for 10-12 minutes.
  4. Drain the potatoes and return them to the pot.
  5. Melt the butter in a small pan over medium heat, add the minced garlic, and sauté for 1-2 minutes.
  6. Pour the melted garlic butter over the potatoes and mash until smooth.
  7. Stir in cheddar cheese, parmesan, parsley, salt, and pepper until combined.
  8. Roll the mixture into small balls (1-2 inches in diameter) and place on the baking sheet.
  9. Bake for 15-20 minutes until golden brown and crispy.
  10. Remove from oven and serve hot, garnished with extra parsley if desired.

Notes

These potato bombs are great for appetizers, snacks, or side dishes. Pair with dips like ranch or sriracha mayo.
