Delightful crispy fries infused with fresh Parmesan and a savory flavor that makes them a great snack or side dish.

  • 500 grams (1 lb) potatoes, peeled and cubed
  • 1 teaspoon salt (for boiling)
  • 1/3 cup fresh grated Parmesan cheese
  • 1/4 teaspoon fresh ground black pepper
  • 4 tablespoons potato starch
  • Fresh parsley, chopped
  • 1 tablespoon potato starch (for dusting)
  • Oil for frying

Instructions

  1. Begin by bringing a large pot of water to a boil, and salt it with 1 teaspoon of salt.
  2. Add the cubed potatoes to the boiling water and cook until they are fork-tender, about 10-15 minutes.
  3. Once cooked, drain the potatoes well and transfer them into a bowl. Using a masher, mash the potatoes until smooth and free of lumps.
  4. To the mashed potatoes, mix in the black pepper, chopped parsley, grated Parmesan cheese, and 4 tablespoons of potato starch until well combined.
  5. Divide the mixture into two equal portions. Roll each portion into a dough ball, and dust a clean surface with potato starch.
  6. Roll out each dough ball into a rectangular shape about ½ inch thick. Slice the rectangles into thin strips to form fries.
  7. In a deep fryer or large frying pan, heat oil over medium-high heat.
  8. Fry the potato strips in batches for about 5-7 minutes, or until golden brown and crispy.
  9. Once browned, use a slotted spoon to transfer the fries to a wire rack placed over paper towels to drain excess oil.
  10. Serve the fries hot, optionally sprinkling with additional grated Parmesan for an extra cheesy kick.

Notes

Ensure potatoes are drained thoroughly after boiling to achieve maximum crispiness. Experiment with spices for added flavor.
