A delightful and healthy alternative to traditional fries, these Crispy Parmesan-Gilded Carrot Fries are packed with flavor and nutrients, making them the perfect side dish or snack.

Ingredients

  • 2 pounds of carrots, peeled and sliced into 1/4 inch thick ‘fries’
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1/2 cup of grated Parmigiano Reggiano (Parmesan cheese)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the sliced carrot fries with olive oil, and season with salt and pepper.
  3. Sprinkle the grated Parmesan cheese over the carrots and toss again to coat.
  4. Spread the fries in a single layer on a baking sheet lined with parchment paper.
  5. Roast the fries for about 16-20 minutes, stirring halfway through.

Notes

For extra flavor, add garlic powder or paprika to the oil, or drizzle honey before serving. For crispier fries, broil for a minute or two after roasting.
