  • 4 cod fish fillets, 5-6 oz each
  • 2 tablespoons olive oil, plus more for rubbing on fish
  • 1 tablespoon butter
  • 1 tablespoon paprika (smoked or sweet)
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

Instructions

  1. Begin by preparing the blackening spices. In a small bowl, combine the paprika, onion powder, garlic powder, kosher salt, black pepper, cayenne pepper, oregano, and thyme. Mix well until all the spices are fully incorporated.
  2. Pat the cod fillets dry with a paper towel. Rub each side of the fish with approximately 1 teaspoon of olive oil and coat generously with the spice mix.
  3. Heat the remaining olive oil in a skillet over medium-high heat. Add the seasoned cod fillets once hot and shimmering.
  4. Cook for about 3-5 minutes until spices turn black and form a crust.
  5. Add the butter to the pan, flip the fish, and cook for an additional 1-2 minutes until it flakes easily with a fork.

Notes

For best results, pat cod fillets dry before seasoning and ensure the skillet is hot before cooking.
