These Easy Crispy Shrimp and Cabbage Egg Rolls are a delightful crunch filled with savory shrimp and fresh cabbage, perfect for any gathering.

Ingredients

Scale
  • 1 lb large shrimp, fresh, peeled, and deveined
  • 2 cups cabbage, finely shredded
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1012 egg roll wrappers
  • 1 egg, for sealing
  • Vegetable oil for frying

Instructions

  1. Cook the shrimp: Heat a skillet over medium heat, add the shrimp, and cook for about 2-3 minutes on each side until they are pink and opaque. Remove from the skillet and chop them into small pieces.
  2. Sauté aromatics: In the same skillet, add a little oil if needed, and sauté the onion and garlic for 2-3 minutes until they soften and emit a fragrant aroma.
  3. Add cabbage: Toss in the finely shredded cabbage and cook for 4-5 minutes, allowing it to become slightly softened. Add the soy sauce, sesame oil, ground ginger, salt, and black pepper, cooking for an additional 2 minutes to meld the flavors together.
  4. Combine shrimp and cabbage: Remove the skillet from heat and let the mixture cool slightly before folding in the chopped shrimp until evenly distributed.
  5. Wrap the egg rolls: Place an egg roll wrapper on a flat surface, spoon 2 tablespoons of the filling into the center. Fold the sides inward and roll tightly, sealing with a bit of beaten egg to secure the edges.
  6. Fry to perfection: Heat vegetable oil in a skillet over medium-high heat, frying the egg rolls in batches for 3-4 minutes until they are golden brown and crispy.
  7. Drain excess oil: Carefully remove the fried egg rolls and place them on paper towels to absorb any excess oil before serving.

Notes

Ensure the oil is hot enough before frying to achieve a crispy exterior. Over-filling can lead to bursting egg rolls.
