  • 2 medium sweet potatoes
  • 1 cup red lentils
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup fresh cilantro or parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a medium pot, add 1 cup of red lentils and 2 cups of water. Bring to a boil over medium heat, then reduce to a simmer for about 15 minutes until the lentils are soft. Once cooked, drain and set aside for later use.
  2. Meanwhile, in a separate pot, bring salted water to a boil. Add the cubed sweet potatoes and cook until fork-tender, which should take about 10-12 minutes. Drain and allow the sweet potatoes to cool slightly before proceeding.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing them until they turn translucent and fragrant—a process that typically takes about 5-7 minutes.
  4. In a large mixing bowl, mash the softened sweet potatoes with a fork. To this, mix in the cooked lentils, sautéed onion, minced garlic, chopped herbs, ground cumin, paprika, salt, and pepper, combining everything until well integrated.
  5. Shape the mixture into 2-inch patties, carefully coating each one with panko breadcrumbs to ensure they get that crispy exterior.
  6. In a frying pan, heat olive oil over medium heat. Fry the patties for about 3-4 minutes on each side until they’re golden brown and crispy. If you prefer a healthier option, you can bake them at 400°F (200°C) for 20-25 minutes, flipping halfway through to achieve even browning.
