A delightful and comforting soup that combines the flavors of classic Chicken Parmesan with a creamy broth.

  • 1 pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 tablespoon Italian seasoning
  • 2 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Place the chicken breasts in the crockpot, ensuring they are evenly spaced for even cooking.
  2. Add the chicken broth, diced tomatoes, heavy cream, Italian seasoning, minced garlic, salt, and pepper on top of the chicken.
  3. Secure the lid and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once the chicken is fully cooked and tender, shred it carefully with two forks and mix it back into the soup.
  5. Stir in the grated Parmesan cheese until melted and perfectly combined.
  6. Serve hot, garnished with fresh basil if desired.

Notes

For a spicier kick, add red pepper flakes. Adding a splash of lemon juice just before serving can brighten the flavors.
