A vibrant and healthy salad combining tender chicken, fresh greens, and crunchy vegetables, topped with a zesty sesame dressing.

  • 4 cups mixed greens (like spinach and romaine)
  • 1 cup shredded cabbage (green or purple)
  • 1/2 cup shredded carrots
  • 1/4 cup sliced almonds
  • 1/4 cup crispy chow mein noodles
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 teaspoons sesame oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon garlic, minced
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. In a large bowl, combine the mixed greens, shredded cabbage, shredded carrots, and sliced green onions.
  2. Next, fold in the shredded chicken, sliced almonds, and crispy chow mein noodles.
  3. In a small bowl, prepare the dressing by whisking together the soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and sesame seeds.
  4. Pour the dressing over the salad mixture and gently toss until evenly coated.
  5. Finally, sprinkle additional sesame seeds on top for garnish before serving.

Notes

For enhanced flavor, toast the almonds before adding. You can also add edamame or crispy tofu for extra protein.
