  • 1 medium cucumber, sliced or julienned
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup chopped fresh herbs (dill or parsley)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder (optional)
  • Salt and pepper to taste
  • Wraps (flour, spinach, whole wheat, or low-carb)

Instructions

  1. Gather all ingredients. Wash and slice cucumber as desired.
  2. In a medium bowl, mix cottage cheese, cucumber, red bell pepper, herbs, lemon juice, garlic powder, salt, and pepper until combined.
  3. Lay out your wrap and spoon the filling onto it, leaving a border around the edges.
  4. Roll the wrap tightly, folding in sides to secure the filling.
  5. Cut the wrap in half or into bite-sized pieces and arrange on a plate.
  6. Garnish with fresh herbs or paprika if desired.

Notes

For added crunch, consider including shredded carrots or sliced avocado. Adjust seasonings to taste.
