A delightful loaf cake that combines the sweet richness of dates with the invigorating depth of coffee, topped with a rich espresso glaze.

  • 1 1/2 cups of dates, pitted and chopped
  • 1 cup of hot brewed coffee
  • 1 3/4 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/2 cup of unsalted butter, softened
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of chopped walnuts
  • 1 cup of powdered sugar (for the glaze)
  • 2 tablespoons of brewed espresso (for the glaze)
  • 1 teaspoon of vanilla extract (for the glaze)

Instructions

  1. Combine the chopped dates with the hot brewed coffee in a medium bowl. Let them sit for about 10 minutes.
  2. Preheat your oven to 350°F (175°C).
  3. Grease and flour a loaf pan.
  4. Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a large mixing bowl.
  5. Cream the softened butter and granulated sugar until fluffy in a separate bowl.
  6. Add the eggs one at a time, mixing thoroughly after each addition, then add the vanilla extract.
  7. Mix the dry ingredients into the wet ingredients until just combined.
  8. Fold in the date-coffee mixture and chopped walnuts.
  9. Pour the batter into your prepared loaf pan.
  10. Bake in the preheated oven for 55-60 minutes.
  11. Test for doneness with a toothpick; let cool in the pan for 10 minutes.
  12. Whisk together the powdered sugar, brewed espresso, and vanilla extract for the glaze.
  13. Drizzle the glaze over the cooled cake.

Notes

Ensure butter is softened for easy creaming. Measure flour accurately to avoid a dense loaf.
