  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups semisweet or dark chocolate chips
  • 1 1/2 cups heavy whipping cream, divided
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, for topping
  • 2 tablespoons powdered sugar, for topping
  • Chocolate shavings or cocoa powder, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9-inch springform pan.
  3. Combine the chocolate cookie crumbs and melted butter in a medium bowl.
  4. Press this mixture evenly into the bottom of your prepared pan.
  5. Bake for 8-10 minutes, then allow to cool completely.
  6. Heat 1 cup of heavy whipping cream until it simmers.
  7. Pour the hot cream over the chocolate chips and let sit for 2 minutes.
  8. Stir gently until melted and smooth.
  9. Add powdered sugar and vanilla extract, mixing until incorporated.
  10. Whip the remaining 1/2 cup of heavy whipping cream until soft peaks form.
  11. Fold the whipped cream into the chocolate mixture.
  12. Pour the mousse filling onto the cooled crust.
  13. Refrigerate for at least 4 hours or overnight.
  14. Whip heavy whipping cream with powdered sugar until stiff peaks form.
  15. Spread the whipped cream over the mousse.
  16. Garnish with chocolate shavings or cocoa powder.

For best results, use high-quality chocolate and ensure cream is cold before whipping. Allow ample time for chilling to set the mousse properly.
