  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk
  • 1 cup semi-sweet chocolate chips (optional)
  • 1/2 cup heavy cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a jelly roll pan by lining it with parchment paper.
  2. Beat the eggs and granulated sugar together until thick and pale.
  3. Mix together the flour, cocoa powder, baking powder, and salt.
  4. Fold the dry ingredients into the egg mixture gently.
  5. Spread the batter evenly into the prepared pan and bake for 12-15 minutes.
  6. Cool the cake slightly, then carefully invert it onto a sugared towel.
  7. Roll the cake up gently while it’s still warm.
  8. Prepare the filling by beating together peanut butter, powdered sugar, softened butter, vanilla extract, and enough milk until smooth.
  9. Unroll the cake and spread the filling evenly across the surface before rolling it back up tightly.
  10. Heat the heavy cream until simmering and stir in the chocolate chips until melted for the ganache.

Notes

Roll the cake while warm to prevent cracking. For best flavor, allow the cake to rest overnight.
