  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup light brown sugar, packed
  • 1/4 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 1 large egg (for filling)
  • 1 tsp vanilla extract (for filling)
  • 1 cup pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the large egg and vanilla extract, blending until smooth.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, stirring until soft dough forms.
  6. Roll the dough into 1-inch balls and place them on the baking sheet.
  7. Press your thumb into each cookie ball to create an indentation.
  8. Whisk together the brown sugar, corn syrup, melted butter, remaining egg, vanilla extract, and chopped pecans in another bowl for the filling.
  9. Spoon about 1 teaspoon of pecan filling into each cookie’s indentation.
  10. Bake for 10-12 minutes until the edges are golden brown and the centers are soft.
  11. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier version, substitute half of the all-purpose flour with whole wheat flour or use coconut oil instead of butter.
