Double Stuffed Taco Potatoes

Delicious baked potatoes stuffed with seasoned ground beef, cheese, and fresh toppings, combining the best of comfort food and taco flavors.

Ingredients

  • 4 large baking potatoes
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup sour cream, plus extra for serving
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced
  • 1/2 cup salsa

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Scrub the potatoes under running water and prick them several times with a fork.
  3. Place the prepared potatoes directly on the oven rack and bake for about 60 to 75 minutes or until soft.
  4. In a nonstick pan over medium heat, cook the ground beef and chopped onion until the beef is brown.
  5. Stir in the taco seasoning and 1/4 cup of water, cooking for about a minute.
  6. Once the potatoes are done, let them cool for 10-15 minutes before handling.
  7. Cut them in half and scoop out the fluffy potato pulp into a bowl.
  8. Mash the scooped potato with sour cream and milk until creamy.
  9. Stir in three-quarters of the taco mixture, reserving the rest for topping.
  10. Fold in three-quarters of the cheddar cheese and adjust seasoning to taste.
  11. Stuff the creamy mixture back into the potato skins.
  12. Sprinkle the remaining cheese on top and return to the oven at 350°F (175°C) for 20-25 minutes.
  13. Serve hot, topped with green onions, salsa, and additional sour cream.

Notes

For extra flavor, add hot sauce or jalapeños to the beef mixture. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to a month.
