  • 2 cups Granulated Sugar
  • 2 tsp Baking Soda
  • 2 Eggs
  • 1 20-oz. can Crushed Pineapple with Juice
  • 1 cup Chopped Toasted Pecans (optional)
  • 8 ounces Cream Cheese, Softened
  • 1 stick Butter, Softened
  • 2 cups Powdered Sugar
  • 1 tbsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, crushed pineapple (with juice), and chopped pecans.
  3. Combine the flour, granulated sugar, and baking soda in a large bowl.
  4. Fold the egg mixture into the dry ingredients until just combined.
  5. Grease a 9×13 inch baking dish and pour the batter into it.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Let the cake cool completely in the pan.
  8. Blend together the cream cheese, softened butter, powdered sugar, and vanilla until smooth for frosting.
  9. Spread the frosting evenly over the cooled cake.
